Even more specifically, oleanolic acid was found to block S. mutans from adhering to surfaces at a fairly low concentration, and that adherence is exactly what allows bacteria to form the sticky plaque biofilm that leads to decay in the first place.

The research also found something else worth mentioning, raisins contain mainly fructose and glucose rather than sucrose, which is generally considered the more significant contributor to oral disease. 

A related, unpublished study by the same research group found that adding plain raisins to bran cereal did not increase the acidity of dental plaque, while cereal with added sugar did.

I want to be honest about the limits of this research though, since even the lead researcher was careful about this herself. 

This work was done in laboratory settings, testing raisin compounds against bacteria in a controlled environment, not yet confirmed through testing in actual human mouths under normal eating conditions. 

As the researcher herself put it at the time, this does not mean raisins prevent cavities, it means the evidence contradicts the assumption that raisins are automatically harmful.
